Bikini Recipe

Yields 10 guests

To make the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (yields 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

Making the Cordial: Combine all the items inside a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, remove from the burner and leave to reach room temperature entirely. Pour into an sealable bottle, seal and store in the refrigerator, where it will keep for around four weeks.

Preparing the Premix: Combine the specified spirits and syrup into one large bottle, leave to sit for one hour, then filter it best through cheesecloth, to ensure it's completely strained.

To serve: Measure 85ml from the premix into a mixing glass filled with ice, and stir gently for about 60 seconds until cold. Pour into a cold coupe glass or similar, decorate with some cranberries and finish with a quick spritz with the mandarin essence above the glass.
